6. Cheese |
The Yugoslavian cheese market is very diversified from the demand
side aspect. On the supply side, there is a large number of
suppliers/producers. Excepting the industrial producers, the
demands of the population are supplied by individual producers
who sell their products [many different species of white cheese]
exclusively in the open-air markets. Since the sales of cheese
mostly occurs on the open market [50%],data on the structure
and amount of industrial production of cheese do not tell us
the realistic situation of this market. In Table 6, is shown
the industrial structure of the production of cheese for the
year 2000, which includes hard, half-hard, creamy, and spreading
cheese, etc. Table 6.
